The Colonel Alvarez

Deep in the heart of Seville, down a dark alley in the rough part of town, you will find a dingy food cart operated by a tall, dark figure with a comic-book twisted mustache and receding hairline. Hernando Hernández has been serving up one and only one item since 1963 on this dark street in the heart of the wrong end of town in Seville.
It is a sandwich is knows as "The Colonel Alvarez" and locals line up all along that dark alley deep in the rough neighborhoods of Seville day and night as Hernando Hernández serves up delight in sandwich form.
It starts with bread. GOOD bread. This is the foundation upon which every great sandwich is built. No pasty sandwich bread here. I went with a fine sourdough baguette for this iteration of this classic sandwich.

Next, apply a good quality mole sauce to the bread, and then add a nice mayo such as Japanese Kewpie.
Next we'll need peppers and olives.
Now some protein! Any kind of smoked sausage will do, but I went with a spicy Cajun Andouille. DON'T SKIMP ON THE SAUSAGE! That would be tragic.
Then some cheese. I suggest Muenster. But you can go crazy with it. However, if you choose something like Kraft Singles or Cheese Whiz Hernando Hernández will appear behind you and mock you. Just don't cheap out on the cheese.

For the final trick, wrap it tightly in foil and stick it in the oven until you feel it should be toasty, melty, and life-changing.
P.S. I may have fabricated the whole thing about Hernando Hernández and the mean streets of Seville.
